If you are signing your deeds yourself, a member of FN staff takes you to the translators office who verbally translates the deeds to you. You then go to the Notary Office where the papers are signed. Sounds a bit of a drag, but doesn't take too long really and at least it's your signatures on the deeds!
We signed ours last summer after making our final payment on our apartment in Panorama. However, as we were only there for 1 week, the deeds were not ready for us to take away before coming home. Although you can get them sent to you (at a cost of approx 60 euros!), they can be kept safe by FN until you next visit.
From what I know, when you do get the deeds they will only be in Bulgarian. At least by going to through the process yourself, you'll know all is ok.
